There have been several developments at the United Nations regarding the Noahide Laws, here are some of them.
UN Diplomatic Core signs "Declaration of the Seven Laws of Noah"
Uploaded on the official United Nations website is a document called "Uniting the United Nations with Seven Noahide Laws". In this document we learn that on June 10, 2013 the UN Diplomatic corps, UN Press Officers, and other officials gathered at the UN headquarters in New York to learn how the Seven Noahide Laws must play a key role in international efforts for world peace. Guests of honor from the UN Diplomatic Corps also signed a "Declaration of the Seven Laws of Noah," which emphasized the importance of the Seven Noahide Laws in maintaining peace, justice, and harmony among peoples and nations." Does this mean that United Nations has officially endorsed the Noahide Laws? What does the declaration say?
The event was hosted by the Institute of Noahide Code (INC) lead by Rabbi Yakov D. Cohen. Rabbi Cohen discussed how "monotheism" is essential for breaking down barriers between cultures. The document explicitly lays out the Noahide prohibitions against idolatry (which can include Christianity and perhaps Islam). The document states that Jews are obligated to teach the Seven Noahide Laws and that "all people of the are obligated to follow" them. The document also mentions Rabbi Menachem Mendel Schneerson ("The Lubavitcher Rebbe") a man who dedicated his life to spreading Noahide ideology - he is lauded in all of the public laws and proclamations which recognize the Noahide Laws as the foundation of the United States (here) and he is on record stating that non-Jews have satanic souls (here).

Delegates, and Emissaries Gather at UN Headquarters for "One People, One World" ConferenceUNITED NATIONS, New York (June 10, 2013) – On the heels of the Lubavitcher Rebbe's 19th Yahrtzeit, members of the UN Diplomatic corps, UN Press Officers, and and other officials gathered at the UN headquarters in New York to learn how the Seven Noahide Laws must play a key role in international efforts for world peace.
"On this day, people from all over the world gathered on behalf of the Laws of Noah," said Rabbi Yakov D. Cohen, head of the Institute of Noahide Code, which sponsored the conference. "Their observance is required, so that the vision of the United Nations—to have a settled and civilized world, filled with economic justice and righteousness—will prevail."
Titled "One People, One World," the conference brought together journalists, diplomats, and delegates from countries across the globe – including Egypt and Israel. Guests of honor from the UN Diplomatic Corps also signed a "Declaration of the Seven Laws of Noah," which emphasized the importance of the Seven Noahide Laws in maintaining peace, justice, and harmony among peoples and nations.
In his remarks at the event, Rabbi Cohen discussed how monotheism – uniting the world under the one true G-d – is essential for breaking down barriers between cultures. Looking around the room – filled with faces reflecting the diversity of the United Nations itself – Rabbi Cohen insisted that we must work together in bringing the international community to a higher level of spiritual understanding of man's place in the universe.
Other speakers at the event included Cartell Gore, President of the Booker T. Washington Business League, and Richard Dawson, Director of Dawson Associates International, who insisted that all Jews are obligated to teach the Seven Noahide Laws.
In addition to prohibiting idolatry, the Noahide code also forbids blasphemy, forbidden sexual relationships, murder, theft, and cruelty to animals. It also commands its followers to implement orderly processes of justice.
The Institute of Noahide Code is a UN-accredited NGO dedicated to spreading awareness of the Seven Noahide Laws, which all peoples of the world are obligated to follow. It takes its guidance from the inspiring vision of the Lubavitcher Rebbe, who understood the inherent power of these laws to unite the nations of the world.

The Noahide Laws were recognized in the USA because they were presented as "education" rather than religion
The federal public laws recognizing the Noahide Laws in the USA state that they are the basis upon which the nation was founded and that it is the nation's responsibility to educate the public on these laws. Many wonder how these laws were passed since they so obviously breaks the spirit of the law of the separation of church and state. According to Rabbi Cohen of the Institute Of Noahide Code, the bill was passed because Noahide Law was presented as "education" and not religion.

The Institue of Noahide Code list "decapitation" on its website
The organization has listed "decapitation" as part of the command to create Noahide courts on its official website.
That the court is to administer the death penalty by the sword [i.e., decapitation].

Awareness of the Noahide Laws helps the United Nations fight anti-Semitism
Rabbi Cohen believes raising awareness about the Seven Noahide Laws has helped shaped the United Nation's policies on anti-Semitism.
Rabbi Yakov David Cohen, who founded the Institute of Noahide Code, believes that his work raising awareness about the seven laws of Noah’s sons among prominent members of the international community has helped lead to a change in “how the UN views the Jewish people and this has affected their policies especially on anti-Semitism." He feels "the Universal Noahide Code is a means to obtain peace, unity and redemption for the entire world.” He stressed that his work has led to the initiation of events at the UN commemorating the Holocaust and a Hanukkah party for prominent members of the international community.

Poway Rabbis asks UN to adopt the Noahide Laws
In 2019, after the Poway synogogue shooting, the Poway synagogue Rabbi, Rabbi Yisroel Goldstein, was the guest of Israel’s Ambassador to the United Nations, Danny Danon. Rabbi Goldstein told the United Nations to adopt the Noahide Laws as a means to peace, he asked the members to seek the advice of Rabbi Menachem M. Schneerson.
Echoing the words of a speech prepared for presentation at the United Nations in 1987 and edited by the Rebbe, Goldstein spoke about the moral duty to educate the world about the universal ethical principles, known as the Noahide Laws, which were the bedrock of societies that survived and thrived since the dawn of civilization.
“The Rebbe writes about the power of the United Nations,” said Goldstein. “All of you here have been given by G‑d an opportunity to make a difference in the world. The Rebbe taught us something very poignant. That indeed when the world was repopulated after the flood with Noah, G‑d gave seven laws called the Noahide Laws.”
Goldstein called these laws “the bedrock of any civilization that was to exist.”
He suggested that if only the United Nations will go back to the basics, and inspire and empower member nations to adopt the seven Noahide Laws, then “this world would be a very different world, and perhaps we wouldn’t have lost 150 million lives that we have lost in the last 200 years. So I ask every nation that is here, everyone listening, consider taking the seven Noahide Laws back to the basics and apply them to real daily life, and we will see a world of difference.”
